A number of home-based bakers and home food processors are committed to making healthy products that meet specific dietary requirements. One question that comes up often is how to document a particular health claim on a food label. The claims that can be used on food and dietary supplement labels fall into three categories: health claims, nutrient content claims, and structure/function claims. The responsibility for ensuring the validity of these claims rests with “you” the manufacturer, the FDA, or, in the case of advertising, with the Federal Trade Commission.
