I am always asked if I use silicone pans when baking and the answer is absolutely not. I know, to each his/her own. I often think one day there may be proof that stainless steal and Calphalon cause your eye lids to permanently shut or your nose hairs for fall out, but until then I am sticking to good old fashioned stainless steel and parchment paper. There are rare occasions when I use a heavy duty Calphalon cookie sheet, but it’s only for certain holiday cookies made once a year.
